Fennel is a wide white bulb with long green stems and fronds coming out of the top.  In your CSA Share the fennel will usually have some stems and fronds attached.  The feathery fennel fronds can be used as herbs in cooking, they pair well with chicken, fish, and salads.  The stems are not edible, but the white bulb is versatile and delicious.  Fennel can be prepared raw or cooked, and can be used in place of celery for a completely different taste.

Cut the stalks off of the fennel, store in a plastic bag in the refrigerator for up to a week.  You can save the  fronds in a cup of water to use as an herb.


 Trim off any bad spots, or remove outer layer if necessary.  Slice in half lengthwise, then slice thin or dice.  Fennel can grated or shaved into salads, or grilled, braised, or roasted.  Pair well with lamb and pork.
